Peanutbutter Chicken Stew

Peanutbutter Chicken Stew
Ingredients
350g Boneless chicken cubes)
¾ cup chicken broth/water
½ sliced onion
½ sliced bell pepper
1 tbsp tomato paste
1 tomato
2 garlic cloves
Thumb-size ginger
11/2 tbsp peanut butter
1TBSP thyme
1TBSP garlic powder
1 seasoning cube
2TBSP cooking oil
Salt, Pepper to taste

Method
- Blend tomato, garlic and ginger into a paste
- Season chicken cubes with garlic powder, thyme, seasoning cube and pepper. Mix well, and set aside.
- Mix peanut butter with about ¼ cup warm water and make a thin paste
- Heat oil on medium, high heat, add chicken and stir-fry until golden (3-4 min”). remove from pan and set aside.
- Lower heat, add 1 TBSP oil to the same pan and roast onions until fragrant (1-2 minutes).
- Add tomato, garlic, and ginger puree. Cook until tomatoes release oil (3 Minutes)
- Add tomato paste and cook for 2-3 more minutes.
- Pour in the peanut butter paste and bring to a simmer.
- Add the stock/water gradually until it’s incorporated.
- **taste here and adjust salt, pepper or water.
- Add back the chicken cubes, and simmer gently for 3-4 minutes until well absorbed.
- Turn off the heat, and sprinkle with sliced bell pepper.
- Serve and enjoy
