Passion Fruit Cupcakes

I hope you enjoy these aromatic little treats that you can eat as simple muffins or pipe on some colourful frosting for cupcakes. The very first thing: Preheat your oven to 175C !

Passion Fruit Cupcakes
Ingredients
100g Baking flour
100g sugar
100g butter (room temperature)
1 TSP Baking powder
2 Eggs (room temperature)
6-8 passion fruits for ¼ cup juice
**Optional: 100g chocolate chunks
Kitchen Tools
A hand/electric whisk
A mixing bowl
A muffin tray, lined
A spatula
A sieve
Small bowl
Spoon
Method
Part 1: make passion juice
- Slice passion fruits into halves, and scoop out the flesh onto a small sieve in a small bowl.
- Using a spoon squeeze as much juice as you can by pressing the pulp into the sieve. Set aside.
Part 2: Mix the batter
- Add butter and sugar into a large mixing bowl. Whisk until creamy.
- At the eggs one at a time while whisking the mixture. Mix for 1 minute until fluffy.
- Add the flour and baking powder and mix until incorporated
- Add the passion juice and mix well for 1 minute
- ** Fold in the chocolate chunks.
- Scoop the batter into a muffin tin, a little over ½ full.
- Bake in a hot oven for 15-18 minutes
- Serve and enjoy
