Maini Liver Roast Stew

Notes:

1. Stew thickener used on video is Royco Mchuzi mix – Beef flavour. You can make your own thickener by mixing some corn starch with bouillon/flavour cubes For this recipe thickener suggestion: 2TSP corn starch (maizena) 1 beef bouillon cube 1/4cup water *Mix everything and add onto the roast*

2. Keep in mind that flavored thickeners and bouillon cubes are salty, adjust your salt level.

3. The cooking times are for the well-cooked but still tender texture of the liver. Adjust to preference.

4. Keep heat medium-high for better cooking.

Ingredients

300g liver, cleaned and sliced

2TBSP cooking oil

1 medium onion

3 cloves garlic minced

1 large tomato pureed

2 halves mixed bell peppers diced

1 TBSP tomato paste

Salt and pepper to taste

**Optional: Fresh coriander, stew thickener

Method

  • Heat oil on medium-high heat
  • Add onions, cook until transparent (1-2 min)
  • Add liver followed by salt, pepper and garlic
  • Cook stirring until combined and liver is not producing any more liquid
  • Add tomato puree and bell peppers, stir and cook it down. (3-4 minutes)
  • Add tomato paste and cook until oil rises from the sides of the pan (3 min)
  • **Optional: Dissolve 11/2 thickener in ¼ cup of water, add to pan and bring to a gentle simmer.
  • Urn off the heat, sprinkle with coriander to your liking and enjoy.
