Aromatic Orange Cake

Aromatic Orange Cake
Oh and before going any further: PRE-HEAT your oven to 180 degrees C and remove your eggs from the fridge!
Ingredients
1 cup baking flour
2 large eggs (room temperature)
2/3 cup (brown) sugar
1 orange (for zest and juice)
¼ olive oil
1 TBSP baking powder
1 TSP Vanilla essence
** Optional: Handful of walnuts, chopped
Kitchen Tools
2 mixing bowls
Electric or hand whisk
Sieve
Spatula/cooking spoon
A Baking pan



Method
Part 1: Prepare Ingredients
- Oil the baking pan and dust with flour
- Grate orange peel for zest, then juice the orange. Set aside.
- Dust the chopped nuts with a little flour
- Sieve all the dry ingredients (flour, salt, baking powder) together and set aside in 1 bowl.
Part 2: Mix the batter
- Add eggs and sugar into the second mixing bowl and whisk for 6-8 (!) minutes. Until frothy.
- Add oil to the mix and give it a quick whisk.
- Add the rest of the ingredients: dry mix, orange zest, juice and vanilla. Gently mix with a spatula.
- Fold in the dusted nuts (**) and pour into the baking pan
- Bake in preheated oven for 30 minutes. Until a toothpick inserted in the middle comes out clean
- Remove from oven, cool and enjoy
